Cooking Method

Step 1) Pressure cook the Toor dal with some water for 4-5 whistles and cook until the dal is fully cooked and turns mushy. Keep this aside.

Step 2) In a big pan heat oil and add mustard seeds, fenugreek seeds, dry red chilies, curry leaves to temper and then add turmeric powder and hing mix it once and then add shallots (Shallots adds very good taste to the sambar). Then add the cut vegetables (I have added Drumstick, Brinjal, Cucumber, Carrots) also add 2 chopped tomatoes and give it a mix.

Step 3) Add Sambhar powder and chili powder after mixing it once add tamarind extract (soak a lemon size of tamarind in water for 10 -20 minutes and then extract the juice) also add enough water for sambar. Add required salt, cover and cook until the vegetables are 80% done.

Step 4) Once the veggies are 80% done add the cooked Thoor dal a small piece of jaggery to get a balanced taste, mix it well, again cover the lid and cook for 10 more minutes on a medium heat.

Step 5) Once all the veggies are fully cooked add some shopped coriander leaves to get an awesome flavour mix it again and turn off the heat.
